Mexican Lasagna

On Tuesday I fixed Mexican Lasagna, refried beans, and cheese mexican rice!  The lasagna is super easy and requires very little. 

1 can enchalada sauce, corn tortillias, cheese, taco meat (browned hamburger with a package of taco seasoning prepared and a brownie dish.

layer the stuff just like a regular lasagna and bake till bubbly!!  Take the extra enchalada sauce and pour some in the beans for extra flavor!

It was yummy!  last Night Paul had a Mav's game so I didn't cook.

YUM!!  I made Paul's favorite!  Meatloaf (I used 1 cup of Panko Bread crumbs and cut the regular bread crumbs to 1/3 cup!)  That made it less greasy!!  YUM!!  I also made garlic mashed potatoes and Baked Beans!  Dylan ate it all up!!

Tonight we are having chicken breast in the crock pot covered with a Ginger Soy sauce out of a bottle.  LOVE Town Talk for cheap sauces!  We are having some funky shaped noodles.  And Awesome carrots fixed with brown sugar and honey!

I fixed steak marinated in Teriyaki, Julian scallop potatoes, and peas. Yum!!!  I love scallop potatoes out of a box.  I wasn't feeling to good and all this was so easy to do.  Put the steak in the pan, through the potatoes in the oven, and just pour some water over the peas and on the stove they go.  Add salt and pepper and off we go!

chicken and rice casserole

2 c instant rice
2 c water
1-2 T chicken boulon
1 c shredded chicken
1 can corn (drained)
1 can black beans (rinsed and drained)
1 can cream of mushroom soup
1 can milk
2 c shredded cheese divided

Cook rice, water, and boulon.  Mix soup and milk together.  Combine together cooked rice, corn, beans, soup mixture, 1 c cheese.  Put into casserole dish.  Top with other 1 c cheese.  Bake uncovered for 20-30 min at 350*.  Until cheese is browned and soup is combined with casserole.

I am gonna start a blog on the dishes that I cook for dinner.  I come up with things that I though together.  I would love to get some formal training sometime.
